These are pies made in muffin tins, as
featured adorably on ABC’s “Pushing Daisies.” They are a lot of work and a
little bit fragile, but they’re cute as buttons.
To make:
Roll out a pie crust to ¼-inch
thickness. Cut into circles using a 3-inch round cookie cutter. Press into
greased muffin tins. Fill with a heaping tablespoon of pie filling and top with
a lattice crust. Brush tops with beaten egg glaze. Bake at 450° F for 5
minutes. Reduce heat to 325° F and continue baking for half an hour.
To remove, run a knife along the edge
of the tins to loosen the pies. With the knife, gently prise from the cup and
cool on a cooling rack. Enjoy warm with ice cream or cold milk.
